Quick & Healthy Dessert--Roasted Balsamic Strawberries

As busy parents, it is a real challenge to bring healthy food to the table day in and day out. I am constantly looking for healthy recipes that are easy and delicious for my family.

When I stumbled upon this recipe for Roasted Balsamic Strawberries, I really wondered if my kids would even try it. They love strawberries plain, so I felt it was worth a try.

My concerns were squashed by their enjoyment of the end product! We gobbled these up.

Roasted Balsamic Strawberries

Serves: 6

Ingredients
6 cups fresh ripe strawberries
¼ cup good-quality balsamic vinegar (For best flavor, choose one imported from Italy.)
1 TBLspn super fine sugar (or Agave nectar)
Homemade vanilla ice cream or fresh whipping cream (for serving)

Instructions
Preheat oven to 400 degrees.
Trim and wash strawberries. Cut very large ones in half.
Spread strawberries in one layer on a roasting pan.
Drizzle balsamic vinegar over the top.
Sprinkle sugar over strawberries.
Bake for 15 minutes.
Serve with choice of cream and enjoy!
