My daughters class has many children who are gluten-free - when I send food in for special occasions I would like to make it all gluten-free and fun and appealing to all. Any ideas?

So many people are switching to GF food even if they're not strictly GF. I work as a child Nutritionist & finding more & more kids are now on GF diets.I have been making some GF treats recently. I just substitute wheat for oat flour. I make sure I get the oats from a source which states that it has not been processed in a facility that processes wheat. Find oats work really well. Muffins are really good for kids I think. Recently made a GF pumpkin oat ricotta muffin with craisins & walnuts. Kid loved it and wants a mini nut -free version to take to school as a mid day snack. If my fussy kid likes it, I know it's a successful snack :) her's the link to my snack.
